I'm not much of a fan but same here, I do like some Dream Theater every now and then.
Sometimes I'll listen to "Colors" by Between the Buried and Me, some random tracks by Opeth but I love Funeral Portrait most and "Paradise Lost" by Symphony X.
I even have the audacity to club Necrophagist in there :P So you know how much I know about Progressive metal

Progressive metal is amazing! I can't say that I've heard of Introspeccion, Kraken or Demon Hunter though, so I'm off to find them now...
Dream Theatre & Epica are in my list for sure but also:
* Kamelot
* Avantasia
* Edguy
* Within Temptation
* After Forever (you might like them if you like Epica)
* Delain
* Primal Fear (their newer stuff)
* Apocalyptica
* Lacuna Coil
* Ride The Sky
* Nightwish
I have tons more but I'll stop here. I don't think all of mine class themselves purely as prog-metal but if you like power metal and symphonic metal as well then you'll love them! It's such a broad genre that you can have two very different sounding bands both be classed as progressive metal! But it also makes the genre more interesting I guess.
